Shellfish Glace Concentrate

According to seafood supremo Nathan Outlaw, Major Shellfish Glace is as good as any his kitchen has ever made. And reputed for his sixth sense in creating a perfect balance of flavours, he should know!

The result you simply have to try for yourself. But take our word for it, it’s truly sensational. Crab, shrimps, mussels and herbs make it as close as possible to any kitchen-made product.

Create a wave with your sauces and soups, and remember, it’s equally good in risottos, fish pies and chowders.

Makes up to 20 litres of stock.

Suitable for Coeliacs

  • Mix directly into a sauce to intensify the flavour. Delivering a rich velvety glazed finish either hot or cold
  • Use as a drizzle or thicken to make a Jus
  • Mix into oils to create an array of dressings - spoon or pour into a drizzle bottle to create the perfect decoration

For fabulous crab bisque, boil milk and cream together, and then whisk in the glace, season and finish with fresh crabmeat and tarragon

Water, rehydrated shellfish (25%) (shrimp & crab), salt, fish extract, flavouring, cornflour, yeast extract, concentrated vegetables (tomato & onion), sunflower oil, lemon juice concentrate, sugar.

Directions for Use

To make up a stock, use 25g per 1 litre. Spoon directly into sauces and reductions.

Recommended Storage

Before opening, store in a cool dry place. Once opened use within 3 months or by the best before date and keep pot tightly closed and chilled (<5°C) between use.
