Bakewell Flapjack

method
1. Grease a baking tin about 30cmx17cm.

2. Put the oats, flour, ground almonds and raisins in a mixing bowl and stir till well mixed.

3. Stir in melted butter.

4. Add almond extract and golden syrup and mix. If it is a bit dry then add some more golden syrup, if it is too wet add some more oats.

5. Spoon half the mix into the prepared tin and press down with a palette knife. Make sure to get the mixture into the corners and that it is fully pressed down.

6. Mix the jam and Major Raspberry Fruit Base together and then spread over the mixture.

7. Place the rest of the oat mix on top and press down flat .

8. Sprinkle with almonds.

9. Bake in a pre-heated oven 170°C for 20-25 minutes or until edges are golden. Do not overcook. Once cooked set aside to cool.

10. Melt white chocolate in a microwave in short bursts, stirring inbetween.

11. Drizzle chocolate over flapjack in lines in each direction.
