1. Whisk the cream and the Major Clementine together until it forms soft peaks.
2. Cut profiteroles in half and fill with cream. Set aside.
3. Place water and caster sugar in a pan, bring to the boil and then remove from heat.
4. Place chocolate in a bowl and give it short bursts in the microwave until melted. Do not overheat.
5. Whisk the water and chocolate together.
6. Place 4 profiteroles on a plate and then pour over some chocolate sauce.
