Fruity Traybake with Mango Topping
Using Major Mango, Raspberry and Clementine Fruit Bases

Banana- Mashed

Carrots- Grated
100g
Mango- Peeled and Cut into Small Dice
125g Flesh
Eating Apples- Peeled and Grated

Lemon Zest
1 Lemon
Self- Raising Flour

Bicarbonate of Soda
1 TSP
Mixed Spice

for the topping
Icing Sugar
225g
Cream Cheese
75g
Major Mango Fruit Base (2)

method
1. Grease and line a 22cm square tin with baking parchment.

2. Whisk the oil, Major Fruit Bases, eggs and sugar in a electric mixer until light and fluffy.

3. Beat in the banana.

4. Stir in the carrots, mango, eating apples and lemon zest.

5. Combine the flour, bicarbonate of soda and mixed spice in another bowl and then fold in the fruit mixture.

6. Pour the mixture into the baking tray and bake for 40 minutes (or until a skewer inserted comes out clean) in a pre-heated oven 180°C/ 160°C fan.

7. Cool before turning out onto a wire rack.

8. To make the topping beat together the icing sugar, cream cheese and the Major Mango Fruit Base (2)

9. Spread over the top of the cake and then cut into squares.
