1. Marinate the chicken in Major Bombay Mari Base (1) overnight.
2. Heat the oil in a large pan and add the onions. Sweat until soft.
3. Add the tinned tomatoes, mango chutney and Major Bombay Mari Base (2).
4. Add the chicken pieces to the pan with the Major Chicken Stock for 10 minutes then add the cauliflower and mushrooms. Cook until tender.
5. Finish with the coriander and serve with rice.
