Feta and Prawn Salad with Lobster Dressing

Feta Cheese - Cut In Small Cubes

2 Medium Heads

Thyme - Chopped - Fresh

method
1.         Put feta cheese, prawns, cucumber, lemon juice, zest, thyme, oil, vinegar and olives in a bowl and leave to marinade for 30 minutes.
 
2.         Place cos lettuce round salad bowl.
 
3.         Using a slotted spoon remove feta cheese mix and put in centre of lettuce.
 
4.         Mix single cream, Major Lobster Stock Base, marinade and black pepper together and whisk well.
 
5.         Pour over salad.
 
6.         Decorate with cherry tomatoes.
