Jerk Corn and Black Bean Salad
Using Major Caribbean Jerk Mari Base

Canned Corn and Red Peppers

Canned Black Beans- Rinsed & Drained
250g
Mushrooms- Sliced
80g
Onions- Sliced
50g
Cucumber- Peeled & Diced
50g
dressing
Olive Oil
18ml
Rice Wine Vinegar
18ml
Orange Juice
18ml
Garlic Puree

before serving
Coriander Freshly Chopped

Orange Peel - Grated

Cumin Seeds

method
1. Blanch mushrooms in boiling water for 1 minute. Drain and set aside to cool.

2. Combine all salad ingredients.

3. Blend dressing ingredients whisking well.

4. Pour over salad and toss gently.

5. Cover and refrigerate for 2 hours.

6. Just before serving stir in coriander, orange peel and cumin seeds.
