Courgettes- Cut in Half and Sliced

Aubergines

Red Onions- Small Wedges

Pitted Black Olives

Cherry Tomatoes- Cut in Half

Major Mediterranean Vegetable Stock Base

Olive Oil

method
1. Cut peppers and aubergines into 2½cm shapes.

2. Mix all vegetables together except cherry tomatoes.

3. Heat oil in a pan.

4. Add vegetables and stir fry (al dente).

5. Remove from heat.

6. Stir in black olives, cherry tomatoes and Major Mediterranean Vegetable Stock Base.
