Raisins- soaked in orange juice for 1 hour

method
  1. Pre-heat an oven to 180°c, mix olive oil (2) and courgettes. Cook for 20 minutes and then chill.
  2.  Combine the dressing ingredients and set aside.
  3. Add all the salad ingredients to a bowl and add the dressing and mix well.
  4. Serve.
