Long Grain Rice

Spring Onions

Green Pepper - Deseeded and Finely Diced

Yellow Pepper - Deseeded and Finely Diced

Tomatoes - Deseeded and Diced

Frozen Peas - Defrosted

Coriander - Chopped

Rice Vinegar

method
1. Cook rice in plenty of boiling water for 10-12 minutes until tender but still al dente. Drain, rinse under cold water and drain again.

2. Put rice in bowl, add remaining ingredients and mix well.

3. To make dressing, mix all ingredients together and whisk well.

4. Mix dressing into rice and chill for 2 hours.
