Carrot, Lentil & Coriander Soup
Using Major Light Vegetable Stock Base Paste and Major Vegetable Stock Base Paste

Carrots - Diced
250g
Lentils - Dried Red
112g
Onions - Sliced
100g
Oil
35ml
Major Light Vegetable Stock Base Paste
20g
Major Vegetable Stock Base Paste
20g
Water
750ml
Cream - Single
75ml
Milk
150ml
Ground Coriander
1tsp
Ground Cumin
1tsp
Freshly Ground Black Pepper
To Taste
method
1. Heat oil in a pan, add onions and carrots and cook gently for 5 minutes.

2. Add lentils, coriander and cumin. Cook for 1 minute, stirring well.

3. Pour boiling water over Major Light Vegetable Stock Base Paste and Major Vegetable Stock Base Paste and mix well.

4. Pour stock over the vegetables in the pan.

5. Bring to the boil, cover with a lid and simmer for about 30 minutes, or until vegetables are tender.

6. Liquidise in a blender.

7. Return to pan and stir in cream and milk.

8. Season with pepper.

9. Reheat and serve sprinkled with small sprigs of fresh coriander.
