1. Trim any excess fat off the brisket and place in a pressure cooker along with the Major Beef Stock Powder, Major Mediterranean Mari Base, baby onions, cinnamon sticks, garlic and bay leaf.
2. Bring to the boil and place the lid on. When pressure is reached, cook for 1 hour.
3. Once cooked, remove the beef and keep the liquid. Shred the beef. Take a few ladels of the cooking liquid, add to the beef and then reduce until the beef is sticky.
4. Heat up the rice and place down the centre of the taco, followed by the lettuce, beef and tomato.
5. Crumble the feta over the top and serve two tacos per portion.
