Mexican Vegan Pasta Bake

Black Beans - Cooked & Drained

Tomato Puree

Onions - Diced

Black Olives

Penne Pasta - Cooked

Vegan Hard Cheese - Grated
method
1. Heat the oil in a large pan and add the garlic, chillies and onions and soften.
 
2. Add the peppers, tinned tomatoes and tomato puree and cook out for 10 minutes, add Major Fajita Mari Base.
 
3. Add the sweetcorn, black beans and olives and cook for a further five minutes.
 
4. Combine the cooked pasta with the sauce and put in an oven-proof dish. Sprinkle with vegan cheese and bake for 25 minutes.
 
5. Serve with crusty bread.
