Vegan Pea Soup
Vibrant Pea Soup suitable for Vegan and Gluten Free Diets made with Major Vegetable Stock Powder

ingredients
Olive Oil
30ml 
Celery- finely diced 
150g
Garlic Cloves- finely diced 
35g
Shallot- finely diced 
150g 
Frozen Peas
1.5kg
Water- boiling
1lt 
Major Vegetable Stock Powder
40g
Sunflower Spread
30g
Dairy-Free Milk Substitute 
300ml 
Freshly Ground Black Pepper 
To Taste 
Sesame and Flax Seeds- toasted 
To Garnish 
Soya Yoghurt (Optional)
To Garnish 
method
  1. Heat oil in a pan.
  2. Add celery, garlic, and shallots. Sweat on a low heat until soft but not coloured.
  3. Add peas, water and Major Vegetable Stock Powder and mix well.
  4. Bring to the boil and cook for 2 minutes.
  5. Stir in the sunflower spread and dairy free milk.
  6. Blitz in a food processor until smooth.
  7. Strain. 
  8. Garnish with soya yoghurt,  toasted sesame and flax. Season with coarse pepper.
