Chickpea Cous Cous Salad
Using Major Mediterranean Vegetable Stock Base and Major Moroccan Mari Base

Olive Oil

Onion- Chopped

Canned Chopped Tomatoes

Canned Chickpeas- Drained and Rinsed
155g
Water- Boiling
210ml
Major Mediterranean Vegetable or Vegetable Stock Base
7g
Major Moroccan Mari Base

method
1. Put oil in a pan and heat.

2. Add the onion, cumin and coriander. Fry over medium heat until soft.

3. Pour water over Major Mediterranean Stock Base and mix well.

4. Add tomatoes, chickpeas and stock to the onion mix.

5. Bring to the boil then simmer for 10 minutes.

6. Stir in Major Moroccan Mari Base.

7. Remove pan from the heat and stir in the cous cous. Cover and leave for a few minutes allowing the cous cous to swell.

8. Chill then break up the grains with a fork.
