method
1) Remove heads and peel shells from king prawns but leave tail sections on.
2) Place prawns in a mari-bag and add Major Thai Mari Base.
3) Massage and place in refrigerator for a minimum of 2 hours.
4) Peel and dice the flesh of the mangoes and tip into a bowl.
5) Add remaining salsa ingredients and mix well.
6) Place in refrigerator for two hours so the flavours infuse.
7) Heat a lightly oiled griddle and when very hot cook prawns for 45 seconds on each side until they turn from grey-blue to pink.
8) Serve hot with salsa.
