Cheddar, Pancetta and Spring Onion Muffins
Using Major Cheddar Stock Base and Major Hickory Applewood Smoke Liquid Seasoning
Major Hickory & Applewood Smoke Liquid Seasoning
1. Line muffin tray with paper cases.
2. Sieve flour and sugar into a large bowl.
3. Whisk together the vegetable oil, eggs, milk, Major Cheddar Cheese Stock Base and Major Hickory & Applewood Smoke Liquid Seasoning.
4. Fold into flour.
5. Fold in pancetta, diced cheddar, spring onions, mustard seeds, nigella seeds and crushed chillies. Do not over mix.
6. Divide mix evenly into muffin cases.
7. Sprinkle with grated cheese and bake for 20-25 minutes, or until golden and springy to the touch, in a pre-heated oven 180°C or 160°C fan oven.
