Jerk Pork with Rice and Beans
Using Major Caribbean Jerk Mari Base and Major Roast Chicken Stock Base

Pork Loin Steaks

Major Caribbean Jerk Mari Base
120g
Major Roast Chicken Stock Base Paste
60g
Creamed Coconut
50g
Water - Boiling
150ml
Spring Onions - Trimmed and Sliced
75g
Canned Red Kidney Beans - Drained
410g
Basmati Rice - Cooked

method
1) Place loin steaks in a Mari Bag and add 90g of the Major Caribbean Jerk Mari Base. Massage lightly, seal and place in refrigerator for a minimum of 2 hours.

2) Put water in a pan and stir in Major Roast Chicken Stock Base.

3) Add coconut and stir until dissolved.

4) Add spring onions and stir well.

5) Stir in the rice, beans and remaining Major Caribbean Jerk Mari Base.

6) Stir and heat gently.

7) If the rice looks a dry add a little water.

8) Cook loin steaks on a griddle.

9) Put rice on a plate and place pork loin on top.
