Lemon and Blueberry Layered Cake

method
1. Pre-heat oven to 170°C.

2. Beat the butter and sugars together for 2-3 minutes.

3. Add the eggs 1 at a time mixing completely between each egg.

4. Fold in the dry ingredients, followed by the wet ingredients.

5. Add the blueberries and 1 tbsp of flour.

6. Split the mixture between 3 prepared sandwich tins and cook for 20-25 minutes.

7. When cooked take out of the oven and place on cooling racks until cold.

8. For the frosting add all of the ingredients together and beat until everything is incorporated. Place in the fridge to set a bit.

9. Trim the tops off the sponges. Spread some of the frosting on top of 2 of the sponges and then place the sponges on top of one another. Spread the remaining frosting on top and around the sides of the layer cake and then serve.
