Canned Black Beans- Rinsed and Drained

Canned Green Lentils

Red Bell Peppers- Finely Sliced

New Potatoes- Sliced

Carrots- Grated

Spring Onions- Finely Sliced

dressing
Dry Mustard

Garlic Puree

Parsley - freshly chopped

Rice Vinegar

method
1. Cook the sliced potatoes until just tender. Drain and set aside.

2. Toss all the salad ingredients together.

3. Blend all the dressing ingredients together whisking well.

4. Pour dressing over salad and toss.
